Mushroom, Asparagus and Kale Pie (v)

This is a wonderfully adaptable dish – it can be a tasty main course, or the perfect answer to ‘what vegetables do we want tonight?’. Quick to prepare and cook, it will soon become a family favourite!!

Method

Melt butter in a frying pan and add garlic and onion until soft

Stir in the button mushrooms and cook for 2-4 mins before adding in the kale

Stir together and add in the asparagus

Add the crème fraiche and mix well together

Place the pastry on a floured surface and cut off one third

Roll out the other two thirds large enough to cover the oval roaster’s base and sides

Then roll out the other third as a lid to cover the roaster

Place the large piece of pastry in the roaster, making sure that it is tucked into the corners – trim off any excess which protrudes over the rim

Egg wash the pastry and add the ingredients mixture and cover in grated cheddar cheese

Add the pastry lid to the oval roaster and decorate the top as you wish – remember to pierce the top of the pastry a few times

Add an egg wash to the top of the pastry and place in the oven for 40-50 mins at 180C

Remove from the oven, serve and enjoy!
