A healthy and unusual take on ‘chips’! Sweet potato fries look great after just 30 minutes, and left for a few seconds to crisp off – we are sure that many will never make it to the table having been nibbled en route!
Cut the tops off the sweet potatoes then proceed to cut the potatoes into strips of around 4-6cm long
In the bottom of the roaster add a drizzle of olive oil and add the potatoes
Sprinkle with salt, pepper, parsley, garlic and horseradish
Mix together well and top with a further drizzle of olive oil
Place in the oven for 30 mins at 390F
